Total: 5 Minutes
Serves: 1
  • 4 oz unsalted and no sugar added tomato juice
  • 1 tbsp Umami Everything – Spicy Umami Sauce
  • ½ oz fresh yuzu juice (or lemon if unavailable)
  • ½ oz agave syrup (for balanced sweetness)
  • 1.5 oz smoky mezcal or shochu or replace with your favorite NA replacement.
    *We suggest a NA Tequila/Mezcal.
  • 2 oz sparkling water
  • Pinch of celery salt
  • Pinch of black pepper
  • Ice cubes
  • Optional  Garnishes

    • Lemon wedge
    • Cucumber spear
    • Pickled Spicy Pepper

    ‍

  • Build: In a shaker, combine tomato juice, Umami Everything, yuzu juice, agave, mezcal/shochu (or NA replacement), celery salt, and black pepper.
  • Shake: Add ice and shake hard for 10–15 seconds to fully extract flavor and chill.
  • Strain: Double strain into a tall glass filled with fresh ice (use a Hawthorne strainer plus fine mesh). This keeps the flavor but removes large garlic/negi pieces.
  • Top: Add sparkling water for lift.
  • Garnish: Finish with a lemon wedge, cucumber spear, pickled spicy pepper, or a crispy negi stalk for a signature touch.
