4 oz unsalted and no sugar added tomato juice
1 tbsp Umami Everything – Spicy Umami Sauce
½ oz fresh yuzu juice (or lemon if unavailable)
½ oz agave syrup (for balanced sweetness)
1.5 oz smoky mezcal or shochu or replace with your favorite NAÂ replacement. *We suggest a NA Tequila/Mezcal.
2 oz sparkling water
Pinch of celery salt
Pinch of black pepper
Ice cubes
Optional  Garnishes
Lemon wedge
Cucumber spear

Build: In a shaker, combine tomato juice, Umami Everything, yuzu juice, agave, mezcal/shochu (or NA replacement), celery salt, and black pepper.
Shake: Add ice and shake hard for 10–15 seconds to fully extract flavor and chill.
Strain: Double strain into a tall glass filled with fresh ice (use a Hawthorne strainer plus fine mesh). This keeps the flavor but removes large garlic/negi pieces.
Top: Add sparkling water for lift.
Garnish: Finish with a lemon wedge, cucumber spear, pickled spicy pepper, or a crispy negi stalk for a signature touch.
