  • 6 ounces Japanese noodles (choose one: somen, udon, soba, or ramen)
  • 1 block firm tofu, drained, pressed, and halved into two steaks
  • 1 cup fresh tomato, chopped
  • 1 cup steamed broccoli florets
  • 2 to 3 tablespoons Azabu Umami Everything - Spicy Umami Sauce, or to taste
  • 1 tablespoon neutral oil (for tofu)
  • Optional toppings: sesame seeds, chopped scallion, crushed ice or chilled broth

  • Boil noodles according to package directions. Rinse under cold water and drain thoroughly.
  • In a skillet, heat oil over medium heat. Sear tofu steaks 2 to 3 minutes per side until golden. Let cool.
  • Arrange noodles in bowls. Top with chopped tomato and steamed broccoli.
  • Place tofu steak over the vegetables. Drizzle generously with Spicy Umami Everything Sauce.
  • Garnish with sesame seeds or scallions if using. Serve cold or room temperature.
