6 oz Japanese noodles (choose from udon, ramen, or thick soba)
1 tablespoon rice bran oil
½ block firm tofu, pressed and cut into cubes
½ cup aburaage (fried tofu), sliced into strips
1 tablespoon tamari
2 tablespoons Azabu Umami Everything - Original Umami Sauce
1 clove garlic, finely sliced
¼ cup onion, thinly sliced
¼ cup carrots, julienned
¼ cup green bell pepper, thinly sliced
¼ cup bean sprouts
1 stalk Japanese green onion (negi), thinly sliced
Optional: chili threads, sesame seeds, or nori for garnish
Prep the noodles: Boil noodles according to package instructions. Rinse with cold water, drain well, and set aside.
Crisp the tofu: In a large skillet or wok, heat rice bran oil over medium-high heat. Add cubed firm tofu and sear for 4 to 5 minutes, turning to brown all sides. Remove and set aside.
Sauté aromatics: In the same pan, lower heat slightly. Add sliced garlic and onion. Stir-fry until aromatic, about 1 minute.
Add vegetables: Toss in carrots, bell pepper, and bean sprouts. Cook for 2 minutes until just tender but still crisp.
Layer in flavor: Return both tofu types (firm and aburaage) to the pan. Add cooked noodles. Pour in tamari and Azabu Umami Everything - Original Umami Sauce. Toss well to combine and heat through, about 2 minutes.
Finish and plate: Top with sliced negi. Garnish with chili threads, sesame seeds, or nori if desired.
